I’ve not been too well lately and I’m beginning to wonder if my lack of land-animal-eating is causing me some grief. My GP did write me up for some blood tests to check my iron levels a while back but I’ve been neglectful and not had them done yet………shame on me.
When I first went off the red and white stuff I was eating a lot of lentils, beans and tofu and was feeling great. The last couple of weeks though my diet’s been a little ho hum and I’m fairly confident that I’m now paying the price for my neglect. In an attempt to rectify some wrongs I did a little research to see what I could throw into a smoothie to get a good iron hit, my result – a delicious green “Chocked full of iron” smoothie. I hope you enjoy!
- 1/2 cup coconut water
- 2 handfuls baby kale
- 1 kiwi fruit
- 1 banana
- 1 teaspoon Vital Greens
- 1 teaspoon chia seeds
- 2 teaspoons LSA
- Peel and roughly slice banana and kiwi fruit
- Place all ingredients in blender and blend until smooth
- Serve in a tall glass
- I take Vital Greens every day, if I've not already had them I will add them to my smoothie - feel free to omit if you wish.
